When life hands you strawberries..make ETON MESS..great old fashioned, English Dessert Recipe in photos

This is traditionally made at Eton School for Boys in England, UK. Using cake, whipped cream, strawberries and strawberry jam.
I am doing a low sugar and very healthy version.

Bake your own vanilla or almond flavored sponge cakes, (I topped mine with roasted broken almonds for texture) then either slice them or break them into crumbs, place in large bowl.
Add washed and sliced fresh strawberries (may also combine fresh raspberries, blueberries, blackberries & etc.) .
Top this with live plain yogurt, and mix gently to coat the cake and berries.
Serve in chilled glasses or bowls.

You may also add any flavored liqueur or sweet sherry, but really why bother this is a terrific fresh and light dessert and far better with own made cake.

MACERATION another secret to better flavored fruits and vegetable dishes, plus tomato soup; Tuscan bean & Greens soup; Vegetable-tomato pasta sauce photos

MACERATION is the  technique of sprinkling CUT/SLICED FRUIT  with SUGAR. (SEA salt and sugar works well on berries -strawberries halved or sliced and raspberries etc, slightly crushed), CUT/SLICED VEGETABLES with sea salt, to DRAW OUT their juices/moisture. This also tenderizes the fruit and vegetables for easier digestion. it is best to leave them overnight or a minimum of 2 hours at room temp. MARINATION is the opposite and is a technique of ADDING moisture/flavor to fruit, vegetables, meat and fish, USUALLY HERBS, OILS OR WINE

The meatballs are nuts and veggies held together with potato flour, but do have fresh egg to bind them.
