Today I am roasting veggies and then serving them 2 ways..
1 with corn tortillas with cheese and sour cream with scallions to be served as veggie quesadillas;
and the other way with buckwheat poppy seed crepes with wilted mustard greens and tomato sauce to be baked in oven;
also making veggie Cornish pasties with Cheddar cheese and
Mixed vegetable and fennel bulb ragout with green pepper cous cous..fabulous food for the healthier diet!
