Minted pea and potato soup, Ratatouille 2 ways and Giant Chocolate-peanut butter cookie, brownies and polenta cake with raisins..all vegan (nondairy)

Green pea, mint, potato & cucumber soup

Partially blended corn, and zucchini soup

Potato-leek finished with coconut milk, may be served warm or chilled ( Vichysoisse)

Roasted vegetable Ratatouille will be served with whole wheat couscous..by roasting it holds it's textures and flavors best with  tiny grained couscous, finished with green peas,  herbes d' Provence, and chopped fresh parsley
These 2 the oatmeal, peanut butter-chocolate, giant cookie..actually slice into desired sized cookies once cooled in fridge

Eggplant stew,to be served with penne pasta with zucchini, olives, onions, fresh tomatoes, garlic, red wine and tomato base. The sauce will be absorbed into the cooked pasta when served.
