The Victorians had a lot of great ideas that seem to have been lost over the years, one of them was the celery jug.
Did you know that celery, along with some other vegetables that come with the root attached, are still growing?
Also that the leaves of the celery hold the best flavor for salads, soups, juicing and sauces?
In the olden days ( just over 100yrs ago), most English houses, including the working classes, had a celery jug.
The celery would be brought from the field/garden and the root cut, the plant would be well washed but kept intact, then placed root end down into clean water, just like cut flowers.
Every day the water would be changed.
And when needed, the stalks would be ripped off and eaten, mainly raw, with the plentiful leaves being used for cooking.
The vegetable will continue to produce new leaves as it stands in the jug of water, and when, the new roots appear, it can be planted out in either a pot or in the garden and will be ready for harvesting in a couple of months..or let it go to seed and you will have a plentiful supply forever.
The celery jug was either a large ceramic affair or even a cut-glass wide Vase, specifically made for this purpose ( Upper Income households only).
And celery always stood in pride of place on any dining table or buffet.
Re-invent this idea in the 21st century..and please don't keep celery in the salad drawer of your fridge you are wasting money and celery is meant to be eaten crisp not dry and tasteless.
