when everything is even more "laid back" and tea time comes around ....everyone needs feeding.
Here is my recipe for stuffing ( also known as dressing in UK)
When I worked for a well known British Rock and Roll legend in Palm Beach, Florida..( see Channel 4 UK TV series Entourage 2005) this is what got him home on time after gigs around USA...the thought of my "famous" roast chicken with sage and onion stuffing!, (that and also his girlfriend).
you will need:
2 medium brown onions chopped fine ( 2 cups)
The leaves from 2 bunches of fresh sage..about 1 cup full before chopping
6 rashers of smokey bacon* or 4 slices of tempeh bacon..chopped
2 tbsp unsalted butter
8 slices of old bread ( I dry mine over night in oven with just the pilot light), crusts removed and chopped into 1/4 inch dice ( 3-4 cups depending on variety of bread)
3-4 cups good chicken/vegetable stock..hot
salt & pepper
In a large thick based skillet, fry the bacon, to render the fat ( if using tempeh bakon saute in butter).
Add the onion and saute until it is opaque ( sweated down)
Add the sage leaves and remove from heat, stir well
Add the bread "crumbs" and stir well to get the sage mixed in.
Add 1/2 the stock,and mix well, the mix should not be sloppy, add more stock as needed just to hold together.
Add sea salt and ground black pepper to taste.
Gently place ( don't push down or it will not dry out) in a buttered heatproof dish and bake in a medium oven 350f for 30-45 mins, uncovered until crusty on top.
Remove from oven and keep warm, serve with the roast chicken.
*Can also use a good finely ground pork sausage meat ( chicken sausage is too dry)
This is it in it's simplest & tastiest form, you can also add chopped fresh parsley, or herbs of choice.

You can also substitute crushed juniper berries and apple or blackberries for any game roasts..and make by same method, using game stock.
