I am posting some basic recipes for year-round soups..and trying to make them as globally accessible as possible.Your Vegetarian-Vegan choices so far are:
Squash and potato.( sweet potato/yams/regular potato, or even Yucca Root)
.in Spring-Summer using zucchini etc,
in the Fall and Winter using butternut, acorn, & banana squashes etc.
A Hearty greens and bean/chickpea soup..aka known as Caldo Verde ( Portugal) and Green Minestrone (Italy)
Orange and carrot..not vegan if you top with yogurt or cream
