Marinated vegetables Greek Style-salad days..PHOTOS & info






Blanch broccoli/cauliflower florets in boiling water with a little baking soda, and just cook for 3 mins then strain into cold water then drain thoroughly.
Slice or chop and add to chopped cucumber, tomatoes, red onion, peppers, season with  sea salt and ground black pepper and add olive/grape seed oil and lemon juice or red wine vinegar., dried thyme and oregano.
Allow to marinate a few hours or overnight and serve with lettuce leaves, and crumbled feta or fresh cheese.

Variations may add fresh chopped parsley, cilantro, olives & etc.
