I am spending the weekend with some friends and I will be doing most of the cooking, I picked up supplies at a Farm Store (Dowlings) on the 60 fwy in Beaumont, and they make and sell a really good toasted coconut brittle, another reason I always stop and stock up.
I am posting some photographs of the trip up here and part of the dinner I have created, as it is so hot up here and out door fires are not allowed, I am making several salads, a great eggplant "caponata" with just scallions, garlic, zucchini, eggplant, lemon juice and virgin olive oil, ( I poached the eggplant in water & live cider vinegar prior to cooking with the veggies so there would be less oil)...as we are 2500ft above sea level cooking takes a little longer ..lower oxygen. I have also made some beige lentils with cardamon..allowing to cool in cooking liquor with added garlic and scallions.
