Cinnamon Buns & Hot Cross Buns; Doughnuts; Potato Cakes & Patties; Chocolate Bread Pudding & Custard....all using leftovers. Easy and economical recipes from early pioneer days USA


It is a well known fact that some of the best comfort foods known to man are the result of some crafty, thrifty cook using leftovers:
Shepherd's pie was orig. made from the dinner the night before
Potato cakes, Rice cakes/pancakes are better made with leftovers
Some baked pastas & casseroles


Here are some updated ideas, for saving money  & with  world wide appeal, you may add chilies, hot sauce, soy sauce, fruit and vegetable in season..whatever local grown fresh herbs you prefer .to your own particular taste:





Mashed potato leftovers:

Potato cakes..sweet dessert/breakfast items

1 cup mashed potatoes ( use the water they were cooked in to mash)
1 cup hot milk
2 eggs beaten
1 cup sugar
1/2 cup melted unsalted butter
2 1/4 tsp dried yeast or 1 pkt, dissolved in 1/2 cup water
1 tsp sea salt
4 cups all purpose flour
2 1/2 cups whole wheat flour

Mix the potatoes with the hot milk and allow to cool.
 When cool add the eggs, sugar, butter, salt, mix well and then add the yeast mix.
Add the flours and mix well.

Place dough in a greased bowl, cover  and let rise to double size.

When risen, "knock back" and divide into 4, forming into large rolls, place in greased 9inch pie plates..allow to rise to double then bake in 350f for 25-30 min.
cool in pans on wire rack.

Cinnamon Buns..old Pennsylvania Dutch recipe

1 pkt dried yeast  ( 2 1/4 tsp) with  mixed with 1 cup tepid water, and 2 tbsp  all purpose flour.
let stand to frothy stage.

In a large bowl mix 2 cups mashed potatoes
2 cups potato cooking water ( or just 2 cups room temp water)
1 cup sugar
2 cups all purpose flour
3 cups whole wheat flour

mix well to form a dough, adding more or less flour as necessary..place in a greased bowl and allow to rise double.

Knock back and add 1 beaten egg and 1/2 cup sugar, allow to rest for 30 mins.


in a heavy bottomed saucepan melt and bring to boil 2 cups brown sugar, 1 cup water, and cook until it forms a thick syrup, add 2 tbsp ground cinnamon and set aside.

Roll the dough out to 1/4 inch thick and brush the top with melted butter and the brown-cinnamon sugar .

roll up like a jelly roll/Swiss roll and cut pieces off about 2 inches high ( size depends on personal taste)

place the cut slices, cut side down in a greased pie plate, with some of the cinnamon syrup on bottom, or 8 x 12 pan, allowing room for proof, cover with a cloth and allow to double in size.
Bake in 375f oven for 30 -40 mins until golden brown

remove from oven and serve hot directly from pan..or if serving cool, flip up onto serving plate from the pan.
You may also add chopped nuts/ dried fruit to the syrup before rolling.
Variations:
Hot Cross Buns..trad. made for Good Friday

add to basic Cinnamon bun (recipe above), dough:
1 cup washed raisins
1 cup chopped candied peel
1 tsp ground cinnamon
1 tsp ground nutmeg
1/4 tsp ground cloves

Allow mix to prove.
Shape into rolls ( they will double when cooked)
Allow second prove until double size.

mix equal amounts flour and water to make a paste 

When rolls are ready for oven, egg wash then "draw" a cross using a piping bag or plastic bag of the flour paste.
Bake in hot oven 375-400f for about 20 mins until golden brown

Remove to wire rack and brush with simple syrup  ( half sugar,half water simmered until thickened)  

Allow to cool enough to handle, split with butter & devour.

Crullers..buttermilk doughnuts

1 cup mashed potatoes
1 cup packed brown sugar
1 cup sour milk( dissolve juice of 1 lemon in cup milk) or 1 cup buttermilk..has to be soured milk to react with the baking soda
3 tbsp melted butter
2 eggs beaten
1 tsp baking soda
1 tsp baking powder
2 cups wholewheat flour ( to bind the mix)

Vegetable/canola Oil for frying

Combine all the ingredients in order given, to a smooth batter.
Drop by tbsp into hot oil and fry to golden on all sides

remove from oil , drain and roll in cinnamon sugar


     

Potato-cheese pie

2 1/2 cups mashed potatoes
2 tbsp whole wheat flour
! tsp baking  soda
1 egg beaten
2 tbsp melted butter
salt & pepper

Mix all the ingredients together then pat into a greased 9 inch pie plate as with pastry.

Filling
2 beaten eggs
1 cup cream or plain yogurt
1 bunch scallions chopped fine
1 cup grated Cheddar cheese or cheese of choice
salt & pepper

Mix well together then pour onto the potato crust
bake 350f for 25-30 mins..when knife inserted comes out clean

remove from oven and serve from dish hot or cold.

Cold sweet potatoes/yams

sliced thin dipped into beaten seasoned egg, then flour and  shallow fry in hot oil in a skillet.

Potato cakes/patties..with some imagination these might also serve duty as potato burgers with all the usual fixings:

2 cup smashed or grated cooked potatoes
2 beaten eggs
1/2 tsp salt
1 bunch scallions minced
1/2 cup chopped parsley or cilantro

Mix well and form into small patties/burgers.
Dust lightly with flour or grits and shallow fry in hot oil in a skillet.
drain on a wire rack and serve hot ...................

Leftover pickle juice may be used to can beets/onions/red cabbage, added to salad dressing in place of wine vinegar or lemon juice







Leftover bread, besides bread and butter pudding, and bread crumbs, they might also be added to an egg custard and baked.
or used in the following recipe for
 Chocolate Bread Pudding/custard

4 ozs dark chocolate chopped or semi-sweet chocolate chips
3 cups hot milk (even nut milk works)
4 cups breadcrumbs (these are fresh breadcrumbs not dried..place older bread slices in a processor and blend)
3/4 cup brown sugar
1/4 tsp salt ( optional)
1 tsp vanilla extract
3 eggs well beaten

Combine the chocolate with the milk and stir to melt, heating slightly if necessary.
Add the breadcrumbs, sugar, salt, and extract.
Slowly, away from the heat add the beaten eggs.
Pour into a greased 10 x8 pan and place in a roasting pan of hot water.
Bake in middle oven 350f for about 45 -50 mins until top is almost set and the middle is jiggly.
remove from oven and allow to set up as it cools slightly serve from the dish with ice cream or pouring cream

you may add orange liqueur, coffee extract, or even sliced fresh bananas for a great pudding.
