Every world cuisine has a burger/pattie/kofta/dumpling....here are 2 that I personally love:
From the Indian continent..a Jade green kofta with lentils and bulgur wheat (cracked wheat)..these Vegan wonders, I am serving with home made tomato-peach chutney made last year...to be shallow fried at client's home

From Asia, Vibrant yellow millet & rice patties with basil and cumin, these also contain live yogurt and will be baked at clients home with portobello mushrooms & green salad ( own grown arugula inc.)
A wonderful light, almost a mousse, vegetable spread, with carrots, parsnips, celery, onion and eggplant..all poached, then I added raw walnuts, nutritional yeast, fresh parsley, fresh basil, lemon juice and mayonnaise.
The menu for tomorrow's deliveries:
Eggplant and walnut spread with crackers
Lentil Koftas with chutney
Soups:
"Cream" of tomato..finished with coconut cream
Vegetable miso
Entrees:
Coconut cream, vegetable & chickpea curry with steamed brown rice
Grilled eggplant with feta cheese and yellow squash & Mushroom rice

Rice & millet patties with Portobello mushrooms and green salad
Side dish is roasted cauliflower ( roasting make the cauliflower sweeter)
Desserts:
Fresh cherry-water melon fruit salad ( cherries are in season now)
Polenta cake with orange and pine nuts
This is as far as I have gotten with the prep..and these are the dishes that will benefit by being made the day before..to allow their flavors to "mature".
I will post more photos of almost completed dishes ( some have to be cooked at client's home) tomorrow.
