A Loaded Veggie Toastada Compuesta is a toastada platter and makes a great addition to any party..also feeds 6 people for pennies.
1 tbsp oil
1 pound cooked beans ( your choice)
4ozs cooked and crumbled tempeh ( optional)
1 cup chopped onion
3 cloves garlic smashed and minced
1/2 tsp chili powder
2 tsp ground cumin
1 x150zs can tomatoes
2 cups very finely chopped/grated starchy potatoes
1 cup grated carrots/zucchini
1/2 pound cooked and chopped green beans or green peas
2 cups chopped tomatoes
1 iceberg lettuce shredded
1 cup shredded cheese (your choice)
1/2 cup chopped cilantro ( optional)
Avocado, sour cream, red radish ( all optional)
Oil for frying tortillas ( I use grape seed)
In a large skillet, heat the 1 tsbp oil and cook the onions and garlic or 2 mins on medium high,add the cooked beans, cumin and chili powder, cook for 2 mins, stirring to release the spices oils.
Add the can of tomatoes ( chopped), and the grated potatoes & carrots and simmer for 10-15 mins. until all are cooked.
Remove from heat and add the cooked green beans/peas and check seasonings for salt & pepper.
Put skillet on low heat to keep warm, covered to avoid drying out.
Fry each flour tortilla is 1 inch of hot oil until golden brown, turning once, drain on wire rack, then kitchen paper, then keep warm in a 250f oven on a cookie sheet.
to serve..this may be done as a party..lay the tortillas out on a warm platter and surround with bowls of the bean filling, chopped tomatoes, shredded lettuce and cheese, if you have them, sliced avocado, radish, sour cream, salsa's and even salad dressing, and let people build their own tostada.
OR make each one with a tortilla as the base, topped with the bean mix and then chopped tomatoes, lettuce and cheese, may be topped with chopped cilantro and pass around..this is far more economical than any food delivery service or Fast Food outlet and also fresher as you control the ingredients.
Also kids of all ages love an impromptu party especially mid week.
