Here's a re-worked 40yr old recipe that would be ideal for any party or tea time.
CUSTARD CREAM BAR COOKIES
Preheat oven to 350F
1/2 cup softened butter
1/2 cup packed brown sugar
(Cream together and beat well)
1 1/3 cups all purpose flour
1/2 tsp ground cinnamon
1/2 tsp round ginger
pinch of sea salt
1/4 tsp ground nutmeg
( sift all dry together, then add to the butter mix, and beat well.
Reserve 1/2 cup of this mix and spread the rest in a greased 9 x 9 x 12 inch pan
Bake for 15 mins.
Mix 1 cup sour cream
1 large egg
1/4 cup sugar
1/2 tsp baking soda
pinch of sea salt
beat until smooth, then spread over the baked base.
Toss 1/2 cup chopped nuts (your choice) and the reserved crumb mix, and top the cream layer.
Bake a further 12-15 mins.
Cool on a wire in pan and cut while warm
variation you may add Vanilla Extract, almond extract or fresh citrus zest to the sour cream.
These are delicious and you will need more than one pan for any number over 6..great with a cup of tea or coffee
