This is a great supper dish that you can prepare and then bake later....(can be made Vegetarian by adding cheese, but really no need to as the flavor is fab)
serves 4
2 pounds starchy potatoes peeled and sliced 1/4 inch thick
1 1/2 tsp salt
1/2 tsp ground black pepper
2 cups soft breadcrumbs
1/4 cup Vegan Margarine
2 cups milk (nut/bean)
2 cups fresh vegetables sliced thin:
tomatoes, onions, bell peppers, carrots, green beans, celery, squash, zucchini & etc.
1 cup chopped walnuts ( optional)
1 cup cooked beans
1 cup coconut cream ( optional)
2 tsp herbs of choice, basil, thyme, rosemary, sage, parsley, cilantro
in a greased deep oven proof casserole dish
Apply the following, even, layers:
Start with potato slices
Salt,pepper & herbs
Fresh veggies
Cooked beans
Breadcrumbs
1/3 of the margarine
Continue adding layers and top with breadcrumbs, walnuts and margarine.
pour milk over, it should be visible on the top.
Bake at 350f for 1 -1 1/2 hours until potatoes are tender, on a lined cookie sheet
Just before serving add coconut cream by spoonfuls..serve immediately.
Make this your own by using whatever is available locally/seasonally
This makes your home smell very inviting.
