I grew up thinking that the French ate this every day and at every meal, yet when I lived in the south of France for most of the 70's I hardly ever saw it, except served at British Parties...lol
Here are some glorious recipes for anyone who harken's back to the simpler times of a good slice of garlic bread and a cold beer.
The bread does not have to be French, you may use whatever bread you have on hand. I love it smeared over crusty whole wheat anything, from pitas to Granary loaves and cracker breads.
For a quick garlicy bread...rub toasted bread with a cut clove of garlic before buttering..the toast acts like a grater and leaves a layer of fresh garlic flavor on the bread.
This is a recipe that features mayonnaise & cheese (which I think is an Italian-American creation)
preheat oven 375F
1 cup softened butter
1 cup grated Parmesan cheese
1/2 cup thick mayonnaise
6 cloves garlic smashed and minced
4 tbs. minced fresh Parsley
1/4 tsp oregano
1 loaf/pita bread/English Muffins...your choice
in a medium bowl,using a strong wooden spoon, mix everything together adding the herbs last .
Smear on the bread, wrap in foil and bake for 20 mins to allow butter to soak into bread.
CLASSIC
8 large (not elephant type) cloves garlic peeled & cut in half
1 cup melted unsalted butter
3 tbsp minced parsley
coarse sea salt
Broil/toast bread
then rub with cut garlic over entire surface of bread
Brush with melted butter
add herbs and sprinkle with sea salt
enjoy..if you make it this way..you will never have any for anyone else..this is wonderfully addictive..better to give everyone their own toaster...lol
ALMOST A CLASSIC
3/4 cup melted butter
6 large cloves garlic smashed and minced
bread of choice
Heat the butter and garlic in a pan over very low heat until butter melts ..do not allow it to color.
remove from heat and spoon the garlic butter over the bread
Broil until slightly brown..eat while hot
Please try to avoid ingredients like dried anything (herbs garlic & etc.) for this treat, it is BEST MADE WITH FRESH INGREDIENTS AND EATEN HOT.
Roasting garlic makes it's it sweeter, and it almost melts like butter..try it this way spread onto toasted bread
Minced parsley not only adds freshness but also helps prevent garlic breath!
