HERE THEY ARE...wholewheat, & containing healthy turmeric, these are great with apples sauce and sour cream, or poached eggs, for breakfast; lunch any meals not just celebrations.
Variations are at the end of the recipe.
(this recipe may be halved or doubled)
this makes 24 medium or 48 cocktail sized
4 pounds starchy potatoes unpeeled but well washed.
1 medium onion ( you may add more)
3-4 large eggs
whole wheat flour
nutritional yeast (optional)
sea salt ground black pepper
grape seed oil or peanut oil * they don't break down at high temps
I PREFER TO GRATE MINE USING A BOX GRATER, mechanical graters tend to chop as well as grind,and also retain more moisture. Don't process or chop or they will come out like potato chips when cooked. |
also grate the onion, I used a purple one but you may use any. Do not add the grated onion until the potatoes have been drained |

Using a fork as a measure (again to reduce the moisture in the latkes), gently place 2-3 fork fulls in very hot oil, to form a pancake and cook until golden brown and turn over just once. |
Drain on a wire rack, do not use paper towels as they pancakes will stick, keep warm in a 250F oven or store wrapped in wax paper and foil, these may be frozen ahead of time |

You may add grated apples, yams, beets, carrots, parsnips etc.
Serve as any potato pancake-hash browns
great topped with:
smoked fish , salsa, chopped boiled eggs, cheese, tomato slices, yogurt, apple and mint sauces, vegan cheeses, sprouts, hummus, dips and spreads..the list is endless
Makes a great supper dish with baked beans
Use any flour you prefer even GF with chickpea flour, with vegan cooking avoid chia seeds as they retain moisture.
