EATING IN SEASON..USA FEBRUARY IT'S THE HEIGHT OF FRESH CITRUS TIME
Now is the time to "make a killing" on top quality citrus fruit...juice as much as you can, and freeze in icecube trays, then you have fresh fruit juice any time you need it. (as they freeze solid, tip into sealable plastic bags and then freeze more juice).
Also it is a good idea to make candied peel for the holidays, just boil the peel in water until it becomes opaque, then drain and add a sugar syrup and simmer for 1- 1/2 hours then drain on wire racks and air dry for several days.

Rhubarb
Pears
Apples, my new favorite is Pacific Rose

Papaya
Coconuts
Bananas
be careful with all fruits and vegetables imported and out of season, make sure they are purchased un-bruised/damaged and wash well on returning home ( do not wash and store berries, mushrooms) BUT Do wash whole Melons.
