So my clients have opted for some chilled and
classic soups as well as a "trip to the farmhouses of Italy" with Monday's Menu
An almost raw cucumber-lemon blended soup thickened with live yogurt and boiled eggs, cucumbers, lemon zest, scallions, fresh dill, mint, parsley and fennel with light avocado oil..very refreshing and delicious.
The an Italian take on a Spanish soup..Gazpacho with basil, raw tomatoes, peppers, garlic, cucumber, scallions and balsamic vinegar, avocado oil...another light and simple blended cool soup
Then a hearty Minestrone with whole wheat pasta & fresh basil, finished off with extra virgin olive oil.
Entrees
Own grown eggplant. Parmigiana ( I am baking the eggplant as opposed to frying them)
A wonderful roasted red pepper and parsley salad
A refreshing fresh tomato, basil and black olive salad
Smothered cauliflower..which features anchovy fillets and raisins, with the cauliflower sauteed in red wine, chopped olives and olive oil with lots of onions
Desserts:
A caramel apple & Blueberry pie ( really it is a tarte tatin, with berries but that is French..lol)
Orange zest and almond, oatmeal cookies
A sunflower seed sourdough bread
