you will need for 2 persons:
3 small "Persian" Cucumbers ( these are thin skinned and burpless, you can also use Hot house) If you use regular small "Pickle" type cucumbers you will have to peel & seed them
2 cups plain live yogurt
1 tbsp (outside USA these are dessertsp.) chopped fresh parsley
1 tbsp chopped fresh mint
1/2 tbsp chopped fresh dill
1 lightly boiled egg
1 scallion finely chopped
1/4 fresh fennel bulb ( optional, can replace with 1 rib celery)
zest half a lemon with the juice
salt & pepper
add 1 tbsp toasted pine nuts, or raw walnuts
1/2 tbsp olive oil
Blend well and slowly enjoy
all the ingredients before adding the lemon zest and juice and blending |
