Also since the advent of buying ready made appetizers a lot of these simple and delicious ideas/recipes have been lost.
Make ahead DIPS...make and refrigerate up to 12 hours before serving with any of the following in any combination:
Avocado chunks
Melba toast/toast points/crackers
Pretzels/chips
carrot/ celery/cucumber sticks
broccoli/cauliflower florets
pineapple chunks/fingers
Jicama
French fries
Avocado-Cream cheese makes approx 2 cups
2 mashed avocado's
3tsp lemon juice
1 x 8ozs block cream cheese at room temp ( for lower calorie use 1 cup cottage cheese, or low calorie cream cheese)
1tbsp minced scallion
2 cloves garlic smashed and minced
3-4 tbsp milk
sea salt
hot sauce (optional)
2tbsp minced cilantro
Using an electric mixer, whip the cream cheese and then fold in the mashed avocado, onion, garlic, salt and hot sauce.. mix well adding milk to create a good consistency.
Gently fold in the minced cilantro and refrigerate, covered tightly in plastic until ready to serve,.
Serve with potato chips, tortilla chips, raw vegetables & etc.
Blue Cheese & Cream
makes 2 cups
1 cup crumbled blue cheese
1 pound cottage cheese
1 tbsp chopped scallions
1 cup sour cream
1/2 cup any chopped roasted nut for garnish(optional)
Combine well & serve in a bowl with crudities
Tomato-Nut
1 cup chunky peanut or other roasted nut butter
1 cup tomato ketchup
hot sauce to taste (optional)
Mix well and refrigerate before serving..this is great with french fries or potato skins
Finger-Fruit & DIPS
Apple or pear slices, dipped in fresh lemon juice and served with:
a mix of blue cheese and sour cream ( equal amounts of both and folded together)
OR
Cream cheese whipped with fresh orange juice & hot sauce:
( 8ozs cream cheese softened, 1/2 cup orange juice, hot sauce to taste)
Prunes stuffed with chunky peanut butter
Pineapple chunks & picks served with tahini or any nut butter
