Fresh green Mint in my garden today |
I love this salad as I love fresh mint in anything with cucumbers...
This serves 2 as a side/snack
2 cups peeled, seeded and diced cucumber (if hothouse. Persian or Dutch, do not peel)
1 cup plain live yogurt (not strained/Greek)
1/4 cup raisins or chopped dates/apricots
1/4 cup chopped raw walnuts (or any other raw nut)
2tbsp fresh mint minced
crushed black pepper to taste
Mix everything together in a bowl and chill for at least 2 hours.
Serve sprinkled with flaked sea salt* or lemon wedges.
*Do not add salt nor lemon juice until actually serving or this will draw out the moisture from the vegetables and make the salad runny.
