"Pizza" Roll ups
Makes 14
1 cup grated Cheese ( Cheddar, Monterrey Jack, & etc)
1/2 cup marinara sauce..make your own and add more veggies
1/2 cup chopped olives (optional..try adding cooked minced spinach)
Hot sauce (optional)
1 tsp dried basil or Italian mixed herbs
14 slices thin bread, crusts removed
6tbsp melted butter or olive oil
wooden Toothpicks
extra marinara sauce for dipping
Blend cheese, olives, herbs and tomato sauce..allow to marinate at room temp for 3 hours+
Spread bread with the cheese mix, and roll up jelly roll (Swiss roll) fashion, and secure with picks..you may cut these in half and then make 28 mini roll ups
Brush roll-ups with melted butter and lay seam side down on a cookie sheet.
These may be refrigerated up to 8 hours.
Preheat oven 400f..middle shelf
Bake 15 mins or until brown..serve hot with more marinara sauce
Variation:Pizza Bits..instead of rolling them up, simply toast the bread and spread with the cheese mix and bake for 12-14 mins until cheese has melted and then cut in 4 squares and serve.
Olive-Cheese Puffs..makes 24
24 stuffed olives ( peppers, garlic, almond & etc.)
1/4 cup grated Cheddar cheese
1/4 cup soft butter
1/2 cup all purpose flour
1/2 tsp paprika
hot sauce optional
5 hours ahead. Drain the olive and allow to dry on kitchen paper.
Blend the cheese and butter, stir in the flour , paprika and hot sauce and mix well.
Mold 1 tsp of this dough around each olive, covering completely.
Arrange on an un-greased cookie sheet and refrigerate.
when ready to serve:
Preheat oven 400f
Bake 10-15 mins..serve hot or cold with picks.
A Cold Olive and Cream Cheese Appetizer:
Surround each dried, stuffed olive in cream cheese and roll in any chopped nuts..these are great in chopped roasted salted nuts
