Mushroom Salad recipe-- supplement Vit D in diet, improve immune system, and enjoy your food more


Mushroom Salad....makes 6 good servings


Mushrooms:
1 cup tomato juice or a vegetable juice mix, or fresh green juice
1/2 cup olive oil
3tsp lemon or lime juice
1/2 tsp sea salt
1/2 tsp dried tarragon
1/4 tsp ground black pepper

Mix all of the above well, in a large glass or ceramic bowl 
 
Then add the mushrooms and onions
1pound any fresh organic mushroom thinly sliced
1/2 cup thinly sliced onion or 1/4 cup minced scallions

Allow to marinate for 2-3 hours in a cool place


Salad base:
4 cups mixed greens, crispier better, torn into bite sized pieces
1 cup grated carrot
1 cup minced celery
1 cup fresh raw sweetcorn off the cob (optional in mid summer only)

Mix all the salad base in a large bowl, and then plate.
Top with marinated mushroom mix and decorate with  1 cup chopped tomatoes..serve at once


Info:
Fresh mushrooms left in sun for a couple of hours will increase their Vit D levels significantly
