Yes avocado & STRAINED prunes in the mix makes the best Chocolate Cupcakes ever.!!..here goes
makes 10-14 cupcakes depending on size of your molds
PREHEAT OVEN 350F MIDDLE SHELF
Line the cup cake pans with paper liners and grease/oil with a brush around each liner, so any spills come off very easy, without burning.
1 1/2 cups all purpose flour
3/4 cup unprocessed Dutch cocoa
1 tsp baking powder
3/4 tsp baking soda
3/4 tsp sea salt
Mix all the dry together in a large bowl.
1 large ripe avocado, pitted and peeled
3/4 cup maple syrup
1/4 cup strained prune baby food (1x 4ozs jar)
3/4 cup nut milk
1/3 cup safflower oil
2tsp vanilla extract
Blend the avocado flesh with the syrup, prunes, milk, oil and vanilla extract, until smooth then whisk into the dry mix.
Spoon into the lined cup cake liners 3/4's fill.
Bake 25 mins or until a toothpick comes out with some crumbs attached.
Cool in pan on wire rack.
may be glazed (nut milk, melted chocolate and powdered sugar) or drizzled with melted chocolate and chocolate sprinkles.
Store any leftovers (yeah right!) in the fridge as these are very moist and attract mold quickly.
