The secret to better flavored oatmeal cookies is to toast the oatmeal and allow it to cool before baking into cookies. This releases natural oils and gives a nutty flavor to all the cookies.
OATMEAL CHEWS
24 cookies
2/3 cup condensed milk
1/4 cup dried milk
1/4 cup raw wheat germ
1/4 tsp sea salt
2tsp vanilla extract
1/3 cup steel cut oats
1/2 cup raisins
Preheat oven 325F
In a large bowl combine all the ingredients and allow to sit for 30 mins
Mix well then drop by teaspoonfuls onto a baking sheet lined with parchment and oiled.
Bake for 15 mins.
Lift from the paper while still hot and cool on wire rack.
GF OATMEAL DROP COOKIES
36-48 COOKIES
1 1/4cups sugar
1/2 cup safflower oil
2 eggs
6tbsp molasses
1 3/4 cups rice flour
1tsp ground cinnamon
1tsp baking soda
1 tsp sea salt
2 cups rolled "old fashioned" oats (not instant nor quick cook)
1/2 cup chopped nuts
1 cup raisins
PREHEAT OVEN 400F
Cream the sugar and oil and then add the eggs and molasses.
Sift in the cinnamon, rice flour, salt, baking soda, and stir in then add the rest of ingredients, and mix well.
Drop by teaspoonfuls onto a greased cookie sheet and bake 8 - 10 mins, until golden brown.
Cool on tray on wire rack, remove while warm, but not hot.
FRESH APPLE OATMEAL COOKIES
MAKES 36-48 COOKIES
1/2 cup butter
1 cup packed brown sugar
2 eggs
1 3/4 cups whole wheat flour
1/2 cup old fashioned rolled oats
1/2 tsp sea salt
2tsp baking power
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1 cup chopped walnuts
1 cup raisins
1 1/2 cups finely chopped unpeeled apples
PREHEAT OVEN 350F
Cream the butter and sugar and beat in the eggs one at a time.
Combine all other ingredients and stir into the creamed mix.
Drop by teaspoonfuls onto an oiled cookie sheet and bake 12-15 mins or until golden brown.
Cool on wire rack
