Own grown peppers and tomatoes from last years purchases, night flowering cactus, Baby squash sauce for gnocchi; Blondies with choclate chips; Vegetable abd cheese enchiladas; Banana-pineapple custard with chocolate chips..photos of prep for tomorrow deliveries Vegan-Vegetarian menu

These cactus are 4yrs old now and tower over my garden at 18ft. The flowers are only fully opened at midnight and have the fragrance of vanilla-citrus, attracting moths. By noon the next day they are all wilted.


I grew both peppers and tomatoes from seeds I dried from last years market purchases


The flowers are 12 inches across

Chayote squash for the soup, first remove the seeds.

Velvety smooth chayote squash and carrot soup made with veggie stock and almond milk

Almond milk, pureed banana and pureed fresh pineapple with vanilla extract and sea salt, thicken with corn starch and pour over more fresh pineapple and semi-sweet chocolate chips..a very grownup dessert with no added refined sugar.

Baked potatoes filled with mashed potatoes and yams to be topped with grated cheese and baked at client's home

Blondies ( blond brownies, no added cocoa/melted chocolate) made also with  apple sauce, keeps them sweet and moist. These I will frost and top with crumbled graham crackers (instead of nuts)

MARINARA SAUCE; VEGETABLES FOR STUFFED PEPPERS; ASPARAGUS SOUP; EGGPLANT PARMESAN; CORNBREAD WITH VEGGIES; CUCUMBER SALAD WITH APPLE AND YOGURT..PHOTOS FOR TOMORROWS DELIVERIES IN RECORD HEATWAVE

1 GALLON MARINARA SAUCE..recipe in  my first recipe book "Recipes for Success" on Amazon kindle

Zucchini, green peppers, onions, garlic the base for the stuffed peppers, will add cooked jasmine rice and cheese tomorrow with extra Marinara sauce for client to bake

Asparagus and squash soup..fabulous layers of flavors all vegan too

Baked eggplant slices layered with marinara sauce and cheese to be baked later

Cook pepper pieces in boiling salted water, before stuffing and baking

Sauteed vegetables for the cornbread

Cooked and cooled vegetables added to the cornbread batter and to the top

The baked cornbread, stays very moist and is almost a meal in itself

I always now place cooked potato sliced at the bottom of my eggplant Parmesan to provide a solid base for the dish.

Cucumber slices in sea salt for 30 mins then, rinse in fresh cold water, drain and fold into the yogurt and other vegetables..a fabulous summer side dish
Minced cilantro, garlic, apples, lemon juice honey and plain live yogurt, very tasty and very refreshing
