Irish Style Scalloped Vegetable & Cheese Casserole GLOBALLY ADAPTABLE RECIPE



Here is  another  take on scalloped cheese-potatoes.
Add any cooked vegetables for a hearty dish, great for any cold weather too.


Serves 4

3 cups starchy potatoes peeled and thinly sliced
3tbsp butter
3tbsp all purpose flour
1/2 cup thinly sliced onions
2 cups  WARM milk or good vegetable stock
1/2 tsp sea salt
ground black pepper to taste
hot sauce optional
2 cups any cooked vegetables
1 cup grated cheese


make in a greased oven proof deep casserole

Preheat oven 350F


Boil the potatoes in salted water for 5 mins, then drain
Melt the butter in a  saucepan and add the onions, saute for 3 mins then add the flour and make a  white roux.
Gradually add the warm milk to make a sauce, this will thicken up over medium heat.
When thickened, remove from heat.
Add the scallions and parsley.
Arrange 1/2  the potato in  bottom of the dish and top with the cooked vegetables.
Top with  1/2 the sauce and then top this with the remaining potatoes.
Cover with the remaining sauce and top with the grated cheese.

Bake on a lined cookie sheet for 40 mins or until golden and bubbling.
Remove from oven and wait 10 mins for contents to settle before serving.

This is also a very economical supper dish if using leftovers from any meal that day.

You may use Vegan cheese, margarine and milk.
Also substitute cornstarch and water for the roux.

Minced scallion or parsley/cilantro (optional)

Any cooked meat or fish may also be added to the filling, however the dish has to be cooked very well if using leftover cooked meat and fish.

THE EASIEST, simplest and make ahead, Dulce de Leche Dessert EVER !! Recipe







This is one of the simplest dessert ideas ever.

Just boil in lots of water for 3 1/2 hours a can of sweetened condensed milk (make sure the water doesn't all evaporate, and refill with more boiling water. THE CAN HAS TO BE SUBMERGED, ALMOST BOUNCING IN THE BOILING WATER, NOT JUST COVERED).

Remove from water, set in a cool place then chill overnight.
Next day remove both ends of the can and push out the contents, which may now  be sliced.



Slice and serve topped with fresh fruit and whipped cream & nuts or shaved chocolate.
This is great with very ripe bananas.
May also be served in a cooked pastry/crumb pie shell, topped with mashed bananas and cream Banaffi Pie



THE GREAT THING ABOUT THIS IS THAT YOU MAY BOIL AS MANY CANS AS YOU LIKE AND KEEP THEM REFRIGERATED READY FOR UNEXPECTED COMPANY OR A SPECIAL TREAT.

Deliciously easy, the boiled milk becomes a dense butterscotch colored,wonderful caramel.
Great poured over dark chocolate or coffee ice cream.

Wolfgang Puck is serving Shepherd's pie to some to the Movie Stars tonight....tomorrow some are having Vegetable paella and Black bean and Mushroom Loaf, which they prefer anyway.

ALL VEGETARIAN!! Squash Pancakes & Turnip-Tomato Patty Bake MORE Money Saving Recipes



Here are 2  MORE great money saving recipes that will serve 3-4 persons


Zucchini Pancakes

You will need either 4 cups mashed cooked zucchini or the same amount of grated raw zucchini
2 cups grated cheese (optional)
Salt & pepper to taste
2 large eggs beaten
herbs to taste
1 ripe bell pepper minced
2 cups flour
Bread crumbs to coat
1/2 cup cooking oil

Mix the squash, seasonings and herbs.
Mix very well before adding the cheese and minced pepper.
Shape into small flat cakes and dip in flour , egg and breadcrumbs..shaking off excess.
Fry in hot oil in small batches until golden brown on both sides.
Serve warm with salsa, ketchup or mayonnaise.
This is great with any cooked and mashed squashes or sweet potatoes!





Turnip-Tomato Patty Bake

3 cups cooked mashed turnips
1 stick butter or margarine
4 -6 medium tomatoes sliced
salt & pepper to taste
herbs and hot sauce to taste
4tbsp. grated cheese
2 large eggs beaten
1 can condensed mushroom soup*

4 tbsp breadcrumbs mixed with 2 tbsp grated cheese
2 tbsp butter


Fry the sliced tomatoes in butter.
Remove and set aside.
Mix the mashed turnips with salt and pepper, herbs, hot sauce and 4tbsp grated cheese.
Shape into very thin patties.
Dip these in the beaten eggs and fry in the hot oil the tomatoes were cooked in.
Brown on both sides then remove and set aside.
Pour the condensed soup in the same skillet, and heat through.
In a buttered deep ovenproof casserole , place one layer of tomatoes, then turnip patties, repeat until all is used.
Pour over the hot thick soup.
Sprinkle with breadcrumbs and cheese.
Bake in preheated 375F oven for 35-40 mins until golden brown and bubbling.
Wait 10 mins for contents to settle before serving.

This is also a great idea to use with any cooked and mashed vegetables ..perfect for "finnicky" kids and adults too.
*use any condensed soup or vegetable stock/gravy



 





Vegetable & Rice Gratin Bake Recipe..Simple dish for when money is tight, or the door is blocked by snow drifts

Here is something that is easy to make and may or may not be topped with grated cheese.
It can be prepared in the morning and baked at night, nothing will spoil if kept cool or refrigerated.



Serves 3-4

3-4 cups any cooked vegetables
3 cups cooked brown rice
1/2 cup grated onion or minced scallions
1-2 cups grated cheese
2 large eggs beaten
salt & pepper to taste
herbs to taste and hot sauce optional
1 stick butter or margarine


In a large bowl mix everything together (except the butter) and turn into a shallow buttered ovenproof casserole.
Dot with more butter and bake in 375F preheated oven 35-40 mins.

Remove from oven and wait 10 mins for contents to settle before serving to allow contents to settle
