Calzones; Enchilones; Peach & Tomato Salsa; Kale & Sugar Snap Pea Stir-Steam; PHOTOS for delivery NOW

Tomato-Basil flavored corn tortillas sort of a cross between enchiladas and cannelloni

Topped with grated cheeses


Stir-steamed vegetables,,saute in a little oil, add boiling water and reduce, finish with soy sauce and sesame oil, black sesame seeds

Vegetable and cheese filled tomato-oregano dough, calzones

Peach, blueberry & Tomato salsa, finished with fresh mint and lemon juice and served with crisp tostadas

AVOCADO (RECIPES) WITH COTTAGE CHEESE & AVOCADO WITH YOGURT..2 WAYS TO S-T-R-E-T-C-H YOUR AVOCADOS



These are 2 great ideas for making great avocado dips for chips or baked potatoes

Avocado with Cottage Cheese Dip:
2 ripe avocado's peeled and mashed
1 cup/8ozs cottage cheese
1/4 cup fresh lemon juice
1/2 tsp sea salt
1/4 tsp cayenne pepper
2 tbsp minced scallion/onion

Blend together and chill for min. 2 hours before serving in small bowls


Avocado & Yogurt Dip:
2 ripe avocado's peeled & mashed
 1 1/2 cups plain live yogurt ( if using strained yogurt/Greek add another 1/2 cup)
1/2 tsp sea salt
2 tbsp minced scallions or chives, or herbs of choice

Combine everything well to a chunky mix, DO NOT BLEND.
Chill for  2 hours Min. and serve in small bowls

The filling for the calzone with cheese, yellow squash, onions, garlic, mushrooms, eggplants, leeks eventually added tomatoes and nutritional yeast, marjoram

COOKIE RECIPE FOR AUGUST: Fantastic Gluten-Free, dairy and egg free,Granola Bars (ssshhhh these are very healthy and can be Vegan)







This is a simple and beautiful recipe..don't tell the kids, but these ARE healthy.
ANOTHER recipe that has been around for years well before the now TRENDY Vegan Moniker!

This recipe is made in a 11 x7 inch baking pan/ovenproof dish..cut into bars while still warm but allow to cool before removing from pan

I like to make the batter and  leave in bowl for 1 hour just to allow the mix to "mature" before baking..the choice is yours.
*The use of honey makes it Vegetarian as vegans do not eat honey.


1/2 cup roasted nut butter (peanut, almond, cashew & etc.)
1/2 cup agave syrup (or a combination of honey*, sourgum, molasses)

1 cup unsweetened coconut shreds
2 cups Hulled sesame seeds
1 cup sunflower seeds
1 cup chopped cashews, peanuts or almonds   
The dry ingredients may be toasted in oven or heavy skillet (I love this recipe either way)

Beat the nut butter and syrup, until well blended.
Stir in the dry ingredients (if toasted allow to cool before mixing)
Place in the greased/oiled pan, and using wet hands smooth  to 1/2 inch thickness in pan.

Bake middle shelf 350F 10-15 mins until the edges are brown.

Remove and cool on wire rack in pan..cut while warm

Here's how to avoid illness IN HOT SUMMER MONTHS WASH WELL ALL YOUR RAW SALADS







It is very important now in the hot summer months (Europe is also having high Temps.) to wash well all your raw salad ingredients and any other vegetables or fruits you will be eating, skin on. ( best advice is also to peel the fruits and vegetables if unsure of origin)

Even bagged salads (I personally don't like these as you never know when they were prepared and by whom) should be pre-washed before serving.

To wash all fruits  and vegetables well (exception, mushrooms, raspberries, blackberries)

Plunge them in to cold fresh water, and leave to soak for 10-15 mins, then drain and rinse until water runs clear. (they must be covered by the water not just floating in, with tender greens handle delicately).

If unsure of cleanliness of water, add 1tsp laundry bleach per gallon of water, soak and rinse well.

This is to rid the produce of some pesticides and any bacterial infections.

Then drain well and air dry for several hours on either kitchen paper or clean cotton towels before use or storing, in a clean area, and if necessary covered with more paper towels and /or towels..Be well, Eat well and Stay well for the GOOD LIFE.

PEANUT BUTTER COOKIES AND VEGAN MACADAMIA-REDFLAME RAISIN-BITTERSWEET CHOCOLATE BROWNIES..COOKING FOR ChemoWize Dinner & Dance, SAVE THE TATAS











I am in the middle of a large order of cookies and cakes for a  Breast Cancer Recovery Non-Profit called ChemoWize..."Recovery Begins when Chemotherapy ends".
This is a great cause and is organized by a lady I have known since she was 9 yrs old.
She now lives with her family in Wrightwood, CA and this event on Saturday, A Dinner & Dance with a 3 course meal, live bands and raffles is one of her  BIG fund raisers.

Please check it out, and if you attend, please, enjoy some of my baked goods, tomorrow I am making some apple and nectarine whole wheat-cornmeal cakes, all made with lashings of LOVE for a great lady..tasty and healthy nibbles for a great cause
