All the recipes are adapted to being Vegetarian or Vegan, yet full of rich Earthiness and deep bodied flavors.
We are having another mini-heatwave in Los Angeles, and today the Mojave Winds are blowing in, taking the temperature in my back garden up to mid 80'sF.
I have had to move all my tender vegetable seedlings and plants into the shade!
The menu for tomorrow's delivery is:
A light and rich flavored carrot and yam soup..blended with fresh thyme
Smoked eggplant dip ( Baba Ganoush) with toasted Olive oil Focaccia bread
Vegetable pot pies with a yam and flax seed crust

Eggplant Braciole..with tomato sauce, filled with walnuts, sharp Cheddar cheese, (less salty than Parmesan), dry breadcrumbs, olive oil, fresh parsley and basil

Spicy vegetable and tempeh chilli with yams 'fries" ( these are actually baked with lemon juice and paprika).
A Moroccan Vegetable Tagine, with yams, parsnips, carrots, green beans and also served with steamed brown rice..flavored with thyme, cinnamon, fresh lemon peel coriander, cloves, paprika
The dessert is
Mini sweet potato pies (roasted yam. almond milk, eggs, brown sugar, cinnamon, cloves, nutmeg, allspice) in an almond-flax seed crust.
