Cottage Cheese Custard, Apple Pie Recipe
This is a somewhat Traditional American,fruit pie and is very good for anyone who loves deep flavors without all the calories.
Makes 1 x 9inch pie
PREHEAT OVEN 425F middle shelf
3 cups finely sliced, peeled tart/baking apples
1/4tsp ground cinnamon
3/4 cup sugar
1/8 tsp ground nutmeg
pastry for 1-crust 9inch pie plate, unbaked
2 large eggs beaten
1/4 tsp sea salt
3/4 cup milk
3/4 cup small curd cottage cheese (low fat is fine)
1 tsp vanilla extract
1/4 cup raisins
Mix the apples with 1/4 cup sugar and spices and pour into pastry shell.
Bake for 15 mins.
Meanwhile combine remaining 1/2 cup sugar with all other ingredients except raisins and beat until well blended.
Remove pie from oven and turn oven down to 325F
Pour over the apple mix and sprinkle with raisins.
Bake for 40 mins longer in cooler oven, or until set.
Remove from oven and allow pie to cool to room temp and serve.
