HOW TO MAKE FRUIT RIPPLED ICE CREAM AT HOME WITHOUT AN ICE CREAM MACHINE
Use any, very ripe, summer fruit, berries, stone fruit, even mashed bananas!
Serves 8
1 1/2 cups fruit puree or mashed
1 tbsp lemon juice
3/4 cup sugar
1 qt vanilla ice cream
1/2 cup heavy cream
1/4 tsp vanilla or almond extract
Mix the fruit puree/mashed with the lemon juice and sugar and chill for 30 mins.
Soften the ice cream slightly so it can be re-whipped
Whip the cream and add the extract.
Mix the fruit, whipped cream and ice cream quickly, but not thoroughly.
Freeze until firm..serve with extra fruit puree if desired
Variations use any flavored ice cream you prefer
Chocolate or coconut goes well with mashed banana or mango.
