Three Sisters Style soup..butternut squash, green beans and roasted sweet corn

Turnip Greens and lentil soup
Wholewheat couscous with turmeric & cumin for the Tabbouleh salad with chickpeas

Farro cooked with  tomatoes for the Stuffed mushrooms in place of rice


Previous 2 the couscous tabbouleh salad, chopped mint, parsley, tomato, cucumber, red onion, wholewheat couscous

Greens & lentils soup. 3 sisters soup, eggplant Caccatore, roasted corn, green beans tips/Photographs..also last night's 'Blue" Moon

Getting more prep done this morning as it is going to be getting hotter (80's-90f's) over next few days and today we had sunshine and heat as early as 8am.

These 3- the 3 sister's soup (usually made with dried beans, corn and squash, this time I used fresh green beans, butternut squash & roasted corn)



The previous 2 the greens and lentil soup

Green beans cooked quickly in boiling salted water with addition of 1/4 tsp baking soda..baking soda helps keep the veggies green (also works on any greens too) then rinsed under cold running water.

Roasted eggplant for the Cacciatore..roasting uses far less oil and renders a sweet, almost caramelized flavor

The eggplant Cacciatore..the sauce is a "Hunters" type and would have used whatever herbs are available this does not contain Basil, it is flavored with thyme, oregano and rosemary that grow at higher altitudes. Also, garlic, onions and celery.

Soups: Greens & Lentil, Butternut squash, corn & Green bean, Mozzarella Stuffed mushrooms, Eggplant Cacciatore, Couscous tabbouleh with chickpeas and soft tortillas..Thursday Menu





Beautiful day today ..low 80f's after early morning low clouds.....

Great day shopping too, found some lovely vine ripened tomatoes and very crisp eggplants and green beans
The menu for Thursday is a simple affair as many of my client's are out of town:


Turnip greens and lentil  Soup

 3 sisters type Soup with butternut squash, green beans and roasted corn

Tabbouleh with wholewheat couscous and chickpeas,  with soft tortillas, a wonderful warm salad

Portobello Mushrooms , stuffed with baked yams  & Fresh Mozzarella Perline ( pearl sized) with brown rice..to be baked at client's home

Eggplant Cacciatore with Gnocchi..a fabulous wine based "Hunter's Stew" with chunks of roasted eggplant ( roasting makes them softer and uses less oil), the gnocchi soaks up the sauce beautifully.

No Desserts although I might make a chocolate pudding cake as I have friends coming in from England on Friday and we have not seen each other for over 2 decades.
