Orders prepping..tarts and mushrooms

Moroccan Rice pilau with pine nuts, apricots and mushrooms
peeled and quartered apples in butter, brown sugar and lemon juice cooked very slowly, turning


 the caramelizing of the apples ( takes an hour in) for the Tarte Tatin tomorrow, the pastry is made with unsalted whole butter and yogurt, with flour and sugar..to be baked tomorrow morning before delivery
