WASHINGTON* APPLE-CABBAGE SLAW another easy and delicious GLOBAL ADAPTABLE GOOD LIFE RECIPE
This is so simple and delicious I am surprised no one thought of it before..sliced apple wedges with spicy mustard, horseradish tart fresh citrus juices and crispy shredded cabbage..I can and have eaten this as a meal!
Washington* State is where a lot of our apples are grown
juice 1 orange ( 4tbsp)
juice 2 lemons (4 tbsp)
2 medium red or green apples cored and cut into 1/4inch slices
4 cups shredded green or red cabbage( remove core and outside leaves)
1/2 cup mayonnaise
1/2 cup apple sauce
2tsp horseradish sauce
2tsp hot mustard OR 1 tsp made wasabi mustard
1/4 cup minced parsley
1/4 cup any nuts (optional)
1/2 cup chopped dried fruit or raisins (optional)
In a large bowl, pour the fruit juices over the apples, add the cabbage and mix lightly.
In a smaller bowl mix the mayonnaise, applesauce, horseradish, and mustard, well..
Pour over the cabbage mix and completely coat.
Sprinkle with parsley, nuts and fruit and serve immediately.
if not ready to serve only dress the apples.
The rest of ingredients may be kept in containers/plastic bags in the fridge until needed.
Only dress this salad when ready to serve/eat
