This is a wonderful dish that tastes sensational and yet it is so simple to prepare. As you may know walnuts contain lots of omega 3 too.
This makes 4-6 servings
1 pound raw pasta (your choice)
3 cups walnut meats (shelled walnuts)
1/2 cup butter/vegan margarine
1/2 cup olive oil
5 cloves garlic smashed and minced
1/2 cup grated Parmesan cheese (for vegans omit the cheese and use 2 tbsp nutritional yeast)
1 /2 tsp ground black pepper
1/4 glass white wine( optional)
plus another 1/2 cup Grated Parmesan to be passed round with the pasta
Cook the pasta as directed, to al dente...and as the pasta is boiling, in a blender add the walnuts and enough of the hot pasta water to make a thick paste.
Add the butter, olive oil, garlic, pepper, wine and cheese and blend well, adding more boiling pasta water until you achieve the desired consistency of your sauce.
Drain the pasta and return to pan, then coat in this fabulous sauce and serve in warmed bowls with extra cheese.
Variations: may also be made with RAW hazelnuts, pecans or almonds.
