At long last the weather is getting cooler and we now have snow on local mountains...perfect weather for tasty and somewhat mildly spicy Mexican style dishes.

Previous 2, the greens sweated with onions, crushed chilies and garlic for the quesadillas..heat a large flour tortilla and add the greens, grated cheese and top with another tortilla and cook in a dry skillet until the cheese has melted, turning once, will be served with an own grown tomato salsa.
