Great produce from local Farmer's Markets are the ingredients for a very global celebration of vegetarian-vegan dishes for Monday's Menu
Rice wraps with vegetables & roasted almonds with guacamole
Samosa Turnovers ( mild curried vegetables) with fruit chutney
Soups:
Sweetcorn with roasted red peppers
10 Bean with greens
Chunky tomato vegetable
The entrees are:
Masa harina crepes with summer vegetables( pink and orange beets,mushrooms, yellow zucchini, carrots, green beans) cooked in coconut cream & grated cheese
Lime leaf and lemongrass mild curried vegetables with steamed brown rice
Eggplant Parmesan & steamed spaghetti squash
The side chosen is kale and curly mustard greens with garlic
The bread and desserts:
Dried Cranberry sour dough
Fresh fruit salad with jicama(honeydew melon, strawberries, apples, stone fruit, oranges)
Fresh Apricot-nectarine all butter crumb cake
