ALL VEGAN Vegetable Soup RECIPES Creamy Mushroom; Red Klam; Creamy coconut curried soup
Roux based "creamy" soups... Roux is equal amounts of fat and flour.
Heat the fat (oil is better than vegan margarine as that contains water) in a heavy bottomed saucepan..add the flour and stir...for some soups allow to become golden (NOT BROWN) so turn the heat down a bit.
Until the mix is sand-like, then remove from heat and add hot stock in small increments mixing with either a spoon or whisk, then return to heat, stirring and bring to boil to thicken.
Add vegetables and cook slowly on medium to high simmer, lidded and stir often.
Another way especially with mushroom is to cook in the oil first then add the flour.
Creamy Mushroom Soup
2 cups sliced mushrooms
2 tbsp oil
1/2 cup diced onions
2 cloves garlic smashed and minced (optional)
Saute all above in hot oil for 5 mins
Then add 2 tbsp all purpose flour (sorry wholewheat won't work)
make into a light colored roux as above
Then add 3 cups vegetable stock
1/4 tsp salt
1/4 tsp black pepper
Bring to boil and cook for 25 mins. lidded, stirring frequently.
Check seasonings
add 1/2 cup coconut milk
1/2 cup finely chopped parsley (optional)
Serve hot in bowls with crusty bread
Red Klam Chowder...no clams instead use sea vegetables..same results
1 cup finely diced onion
2 tbsp oil
saute together for 5 mins
add 2 tbsp all purpose flour and cook until golden brown
Add 4 cups vegetable stock with 2tbsp (or 2 inches kombu-seakelp) dried seaweed..so the stock is brine flavored.
Proceed as previous recipe
Add 3 cups diced potatoes
1 cup diced tomatoes
1/2 tsp hot sauce (or more)
1/4 cup chopped green bell pepper ( optional)
1/2 cup chopped celery
1 tbsp smoked paprika (optional)
Bring to boil and simmer for 30 mins..stirring occasionally.
Check seasonings adding salt & pepper as needed.
Add 1 cup cooked dried beans
1/2 cup chopped parsley
simmer 10 mins then serve hot in bowls with crackers and lemon wedges
Creamy Coconut Curried Soup
1 cup finely diced onion
1 cup finely diced carrot
1/2 cup chopped celery
Saute in 2 tbsp oil for 7 mins...add 2 tbsp flour and cook to golden brown
Add 4 cups vegetable stock
2 tsp good curry powder
2 tsp ground turmeric
1 inch grated ginger OR 1/2 tsp ground ginger
2 cups diced potatoes
2 cloves garlic smashed and minced
salt & pepper to taste
Simmer, stirring for 30 mins
check seasonings and add
1 cup either defrosted peas or sweetcorn
1 cup cooked brown rice
1/2 cup cooked dried beans
1/2 cup diced fresh tomatoes (optional)
1/2 cup coconut milk
simmer further 20 mins
Check seasonings and serve hot topped with shredded unsweetened coconut.
Variations: may also add on serving:
chopped ripe banana, raisins, chopped ripe apple, more coconut milk
Add whatever is available in your market/pantry and make a hearty Vegan soup..everyone will love it..and made with fresh veggies it is packed with nutrients, with crackers or bread it is a complete meal in a bowl.
