Truly Vegan Vegetable Rice..Photos and info

This is a great side dish an unlike most veggie-rice dishes it is not cooked in oil, nor is it high in sodium.
Also much better to use cooked brown rice, you can use any other cooked grain.
This is a dish that proves simple IS Delicious

Cook onions, garlic, carrots, celery, squash, in vegetable stock, adding more as needed.




add quicker cooking vegetables  last (zucchini, peppers & etc.)
Cooked brown rice with halved grape tomatoes and blanched green beans


Add the stock cooked vegetables and any herbs you like..season with little salt and ground pepper..serve..to reheat add to any dry skillet with 2 tbsp vegetable stock..and saute until hot.
