Here we go for some more great Vegan cookies..egg free, and very delicious.
This recipe makes 24-30 cookies..these are similar to Mexican Wedding Cookies
1 cup Vegan Margarine softened
1/4 cup powdered sugar
2 tsp vanilla extract
1 tbsp water
2 cups all purpose flour (if using whole wheat add 3 extra tbsp water)
1/4 tsp salt
2 cups chopped pecans
extra powdered sugar for rolling
Method;
Beat the margarine until light and fluffy.
Gradually add the powdered sugar, vanilla and water.
Mix well.
Add flour salt and pecans, mixing very well.
Form into a dough, wrap in wax paper and store in refrigerator for 1 hour
preheat oven 350F
Pull pieces off the ball of dough and roll into pinky finger shapes
Place on greased cookie sheets.
Bake in middle oven 12 - 15 mins, or until lightly browned.
Remove from cookie tray and roll in powdered sugar..cool on wire racks store in air tight container.
