APPLESAUCES: WITH APRICOTS; WITH CRANBERRIES; WITH APPLE JACK

HERE ARE SOME TIPS FOR  MAKING YOUR OWN MADE APPLESAUCE:

I prefer mine chunky not strained..it is up to you.

For all flavors cook the apples in organic apple juice not water, this improves the flavor of not so sweet apples.

Cook the sliced, cored and peeled apples cut into 1 inch chunks (1/2 x 1/4slices) just covered in apple juice.
keep tight lidded and simmer for about 30 mins.
Check doneness

No need to add sugar or honey & etc.

You may add 1inch hard butter and stir this in or:

sprinkle of ground cinnamon

sprinkle of pumpkin spice

1/4 cup dried apricots chopped and soaked in apple juice, for 2 hours then added with the raw apples

1/2 -1cup raw cranberries..cook first for 20 mins in apple juice before adding the apples..this will be a tart sauce.

Applejack:  add 3 tbsp apple schnapps/Calvados (apple brandy) to the cooked apple sauce just before serving

The amounts of apples I will leave up to you and it is a good idea to use equal ripe sweet with tart apples.
remove any bruises and the results will be a lovely sauce.

Great with Latkes ( Potato pancakes) and also good with whipped cream for desserts, or even as a quick pie filling.

Avoid using mealy or soft apples as these will just turn to mush.

These sauces are also great with pancakes & crepes!!
