Vegetable Tamale Pies, Butternut squash with agave syrup; Eggplant and mushroom sauce with pasta; Couscous and vegetable salad; Raisin & sunflower seed cookies; bluecorn breads; Asparagus alphabeti soups..The menu for Thursday IN phototgraphs


We have still not had any rain..and the past 2 days it has been in the high 80f's so I have been doing work on my garden.
Thinning out summer overgrowth and moving my tomato and pepper  plants into more sunlight.
I am already picking tomatoes, peppers and eggplants, some  I have used for this menu:





These 2 are the vegetable-asparagus alphabeti soups





The rich filling for the tamale pies...own grown bell peppers, chickpeas, onions, garlic, in a chunky vegetable-tomato sauce





These 2 the own grown eggplant and mushroom pasta sauce




There is also a butternut squash in agave syrup and fresh rosemary, roasted with steamed brown rice ( photos tomorrow)

A French Bistro style, salt-free eggplant (own grown) pate with tortillas

The original recipe included capers & olive but the client is salt-free so I made a base of eggplants, garlic, onion, celery, carrots, rosemary, bay laurel and added cooked white beans and lemon juice and 3 ripe kumquats..then coarsely processed..the client will spread on flour tortillas




A vegetable couscous salad

The vegetables to be added to the couscous at the clients home..on heating (also includes a lemon juice extra virgin olive oil dressing to be added when serving) chickpeas, sugar peas, carrots, onions, peppers, dried apricots,chopped cilantro to be added when cold


Blue corn  corn breads..corn breads and tamales will be baked tomorrow just before delivery

Raisin-sunflower seed oatmeal cookies ..I will make these tonight and post photos tomorrow with  the rest of the menu
