Vegan soups: Winter vegetable and noodle soup; 10 bean and kale; Vegetable stew with whole wheat gnocchi; Couscous with apricots and almonds with vegetables; mashed carrots, Yams and potatoes..simple comfort food menu..photos and tips

Today Los Angeles/Southern California is the hottest place in USA, with day time temps in high 80f's and 90f's, but just for 1 day then tomorrow a cool down to almost  cool ( 60f's) rainy days on Sunday (we have been promised rain for ages but nothing happens).


This seems to have been in the minds of my clients who have ordered a very simple, low calorie and high flavored, Comfort Food Menu for delivery tomorrow....they are also getting ready to order my pies for their Thanksgiving parties so maybe trying to lose a bit of weight beforehand...lol



The menu for tomorrow's delivery...everything is marinating now overnight ( refrigerated) to develop stronger flavors:



A winter Vegetable soup with noodles..yams, carrots, zucchini, onions, celery, parsley,  in a good strong broth (for a better flavored and colored vegetable broth..put all your vegetable peelings apart from potatoes and sweet potatoes, in a pan of boiling water and cook for 30 mins.
Strain, season with salt & pepper, herbs and spices of choice).
Then add the soup raw vegetables and cook for 40 mins in high simmer, skimming as necessary.
Add the noodles during the last 20 mins of cooking.
Test for seasonings and serve hot with more fresh parsley







10 Bean and kale soup..very hearty and cooked for a lot longer than the vegetable noodle soup. Completely nutritional dense too.





A fabulous vegetable stew with whole wheat gnocchi.
The gnocchi will be cooked at the client's home.
Green beans, carrots, potatoes, yams, zucchini, carrots, garlic, tomatoes, onions, celery..again this one is cooked slowly  and the base is carrots, celery, garlic and onions in a tomato broth..this is cooked for 30 mins before adding more vegetable stock and then all the vegetables except the green beans and zucchini which are added during the last 20 mins of cooking




Mashed carrots, yams and white potatoes (skins on)..mashed with dairy butter and salt and pepper..fabulous and very very healthy

Tomorrow I will prepare the whole wheat couscous with apricots, red peppers, almonds and pinto beans.
