LENTIL AND SPINACH SOUP


BLENDED VEGETABLE, TOMATO AND BASIL SOUP..VEGETABLE STOCK BASE WITH ADDED ALMOND MILK

BY PLACING THE HOT CREPES IN CLEAN COTTON TOWELS THEY STAY TENDER..WHEN COOL THEY ARE WRAPPED IN WAX PAPER AND FOIL..these will be filled with the turkey-vegetable mix, topped with grated cheese and baked at client's home

Steaming vegetables in boiling water with  a little baking soda instead of salt, keeps their colors vibrant..steamed then rinsed in cold water & drained well..tomorrow they will be sauteed with sprouted almonds and smoked paprika
