almost RAW CUISINE RECIPE CARROT CAKE..TIPS AND USEFUL INFO



This is a treat and very nutritional dense..the recipe make a small "cake" but you only need to eat  a small piece.





"almost" (the fruit has been sun-dried and then reconstituted with warm boiled water) RAW cuisine is not a new thing, and has been around for over 50 years...it is now coming back into vogue..I like it because it really is all about playing with your food.
This recipe contains honey, if you are a Vegan you may substitute agave Syrup.



3 cups carrots minced/grated fine ( best is to put through a food processor)

1 cup chopped dried fruit* soaked overnight in warm water ( drain the water & use for juicing)

1 cup finely  chopped walnuts or almonds

1/2 cup honey

1tsp ground cinnamon
pinch grated nutmeg
bran/wheatgerm/hemp flour to bind

In a bowl mix all the ingredients together well, if the mix is to wet add bran,hemp flour or wheatgerm to bind.
Shape into a cake.

Decorate with grated coconut (unsweetened) or Raw Nut Butter

This may also be dried in the sun..or "baked" overnight on pilot light only in a gas oven.
Again very rich and a nutritional dense cake and very high fiber too.


* any dried fruit, and any mix.... apples, peaches, figs, dates, prunes & etc.

Also to prevent gas and stomach/colon irritation.

ALWAYS pre-soak any dried fruit before using warm boiled water IN ANY RECIPE BE IT COOKED OR RAW

Drying is a preservative and it is too hard on the stomach and intestines ..also not washing adds yeast spores/bacteria to the body, which can be harmful.
