South American Green salad with fresh berries, toasted nuts and feta cheese...originally from the Amazon--adapted to be globally avaiable





In Australia it is their summer and they are having daytime temps of 109F, IN Los Angeles it is our Winter and today it was 90F in my back garden!!
This is too hot for comfort....lol

With this Winter Heatwave my thoughts turn to salads and I love roasted nuts, salty and sweet salads..this is another of my favorites and make it with whatever is available locally and in your markets..it really is terrific, plus with this salad I am offering 2 dressings...you chose.



Dressing number 1

2tsp salt
2tsp crushed black pepper
4 tsp raspberry or strawberry jam
3 tbsp sherry or other fruity vinegar ( balsamic will work ) OR Fresh orange juice
5 tbsp good extra virgin olive oil

In a small bowl mix the salt, pepper and jam together to make a paste.
Whisk in the vinegar and olive oil




Dressing Number 2
1tsp salt
2 tsp crushed black pepper
4 tbsp orange or lemon juice
3 tbsp roasted nut butter (peanut butter if no allergies is fine)
4tbsp good olive oil OR walnut oil

Add the salt and pepper to the peanut butter, whisk in the orange juice and the oil



The salad:
4 cups any salad greens ( spinach, arugula, lettuce, cabbage -shredded, dandelion, even chard or kale leaves)
1 cup watercress
1 cup toasted nuts (cashews, almonds, walnuts, peanuts, even coconut toast on a cookie sheet in 400f for about 10 mins...stir to avoid burning) if they are salted then omit the salt in either dressing
3 cups any fresh berry (strawberry, raspberry, blueberry, blackberry & etc. or even ripe fresh melon,peaches or grapes will work)
1/2 cup crumbled feta/Pecorino cheese or any other strong flavored cheese








Mix the greens, berries and nuts in a bowl and add 1/4 of which ever dressing you prefer, mix well then plate.
Top each salad with crumbled/grated/slivered cheese.
Serve extra dressing on the side.


This is a wonderful salad any time of day...make it your own way and again add more fresh fruit if berries are not available.


Watch out for anyone with nut allergies..this is great with toasted macadamia nuts and pineapple too.
