Here is a great recipe to use up all your old salted nuts from Christmas or even the nuts that need cracking.
These make great snacks for all ages and can be used with any roasted/toasted nut.
Any kind of roasted nut butter will work with any roasted nuts.
These shown are made with peanut butter, roasted cashew nuts and banana chips..crispy, chewy and very peanutty
1/2 cup softened butter* or margarine
1/2 cup roasted nut butter ( or roasted sunflower seed butter)
1 cup packed brown sugar
1 large egg beaten
1 cup all purpose flour
1/2 tsp baking powder
pinch of salt* ( If using salted nuts do not add salt and use unsalted butter)
1/2 cup chopped roasted nuts
Lightly grease 2 cookie sheets or line with parchment.
In a medium bowl beat the softened butter with the nut butter, until creamy and light.
Add the sugar, beating well and gradually beat in the egg.
Sift the flour,salt if using and baking powder into the egg mix, and stir to combine well.
Add the chopped nuts and mix with hands to form a soft sticky dough.
wrap in cling plastic and chill in fridge for 30 mins.
Preheat oven 375F
From the dough into 20 walnut sized balls and place 2 inches apart of cookie sheets.
Flatten* down slightly with fingers
Sprinkle with more brown sugar (optional)
Bake 15 mins* until golden brown..check after 10 mins as these are high sugar and burn quickly, if you flatten enough they are ready in 10 mins
Transfer to a wire rack until cold and pack in air tight containers..these are fantastic!!
