you will need:
2 bags/1 3/4 pounds Belgium semi-sweet chocolate chips (you can use any GOOD semi sweet chocolate chips you can find)
3 pounds/ 6 cups icing sugar/powdered sugar/confectioners sugar
4 tsp instant coffee
3 tsp vanilla extract ( not imitation)
1 pound/ 2 cups broken walnut pieces
12 ozs/ 1 1/2 cups double cream/heavy whipping cream
6ozs unsalted butter ( it HAS to be unsalted)
in a large bowl over simmering water ( do not allow the water to touch the base of the bowl), melt the butter, 3/4's of the chocolate chips and instant coffee.
When melted, remove from heat, add the vanilla extract, and 1/3 the cream, mix well.
Add the 3/4 of the nuts and 1 pound of sugar and mix well ( do this by hand with a wooden spoon not in a machine or it will be full of air).
Add another 1/3 of cream the cream and another in 1 pound , and repeat with the last 1 pound of sugar and mix well together.
Place in trays to set up, ( I used 3 8x4x3 inch) smooth out the tops and cover with remaining walnuts and chocolate chips.
Cover with wax paper and foil and place in fridge overnight to set up.
Next day slice and or cut and serve.
Great served with powdered unsweetened cocoa to prevent them sticking to plate, or in candy papers
