For any weekend Brunch or lunch party..here are some easy and tasty vegetarian dishes, to add to the party:
Broccoli Bake takes 30 mins and feeds 2 -4
2 pounds cooked broccoli florets
2tbsp butter or margarine
2tbsp all purpose flour ( plain flour)
1 1/2 cups milk (Can be skimmed, whole or nut milk)
3 tbsp sweet sherry (optional)
Salt & pepper
1 tbsp any prepared mustard or horseradish
hot sauce ( optional)
1/2 cup grated cheese
dash paprika
1 drained can of any cooked beans (chickpeas, kidney beans, Lima beans, butter beans, black beans)
in a heavy bottomed pan melt the butter and add the flour, cook slowly until the mix appears like pale sand.
Slowly add the milk, making a thick white sauce.
Simmer and add the sherry, mustard, & a couple dashes of hot sauce.
Remove from heat and add 1/2 the cheese
in a greased heatproof dish, place a layer of broccoli, top with sauce, and continue until full.
Top with cheese and cook under grill/broiler until bubbly
Variations can add cooked meat or fish, may use any vegetable, great with cauliflower and even cooked and drained collards and mixed greens
Potato-vegetable casserole (A great cold weather dish as it also heats your kitchen)
I can condensed cream vegetable soup ( any variety)
2 cups sliced cooked potato
2 cups cooked vegetables
Hot sauce/ketchup/mustard, Worcestershire sauce ( optional)
Grated cheese ( your favorite)
1/3 cup milk ( your favorite)
In a greased casserole, layer the potatoes & vegetables, mixed.
In a bowl mix the condensed soup, ketchup and milk and pour over vegetables
top with cheese.
Bake in a pre heated 350f oven for 30 mins
Remove from oven, wait 5 mins then serve
can be made Vegan style without the cheese, add nutritional yeast.
or for vegetarians, add chopped boiled eggs to the vegetable mix, greens,
Curried potato- vegetable croquettes/patties ( in Indian restaurants these can be expensive)
2 cups mashed potato
1/2 cup whole wheat flour
1/4 cup milk
3 chopped scallions
1 cup mixed cooked vegetables, chopped
1/2 tsp curry powder
1 tbsp butter or margarine
Salt & pepper
1 tbsp chopped fresh parsley
1/4 chopped fresh celery ( 2 stalks)
1 large egg beaten with 1 tbsp water
breadcrumbs
oil for frying
in a bowl add the mashed potato, whole wheat flour and lightly moisten with cold milk.
In a skillet melt the butter, add the scallions and mixed cooked vegetables, and cook with the curry powder, until heated through.
remove from heat, add salt and pepper to taste., and allow to cool, adding the chopped parsley and celery.
Using hands, from 2 inch diameter balls (Can be larger) from the mashed potato, make a with the thumb and add 1 tbsp+ of the curried vegetable mix, and seal the hole.
Roll in egg and then breadcrumbs, shake off excess and deep fry in hot oil, until golden brown.
Drain on cooling wire.
The mashed potato and curried vegetable mix can be made in advance, as can the vegetable balls and fried the next day.
Children of all ages love these ..and are a great way to use up leftovers.
variations..replace curried vegetables with cheese and pickle, some finely chopped cooked meat or fish, chopped boiled eggs.
Cottage cheese pancakes
1/2 cup cottage cheese
3/4 cup flour
1tsp baking powder
1/4 tsp baking soda
1 tbsp sugar ( optional)
1/2 tsp salt
2 large eggs beaten
3/4 cup milk
2 tsp lemon juice
zest of the lemon
Oil for griddle/skillet
Sift all the dry ingredients into a bowl
In another bowl, mix the eggs, cheese, milk and lemon juice and rind, and stir into the flour mix.
Do not over mix.
drop by ladle-spoonfuls on a hot greased griddle/skillet turn (once) when bubbles appear on surface.
Great with unsweetened apple sauce
Poached fruit
or omit the sugar and lemon juice and zest and serve with cold meats, cheese, eggs
Baked Welsh Rarebit...a new take on an old British standard.... serves 4
1 pound grated mature Cheddar cheese or whatever you have ( can always add more cheese if you have it)
1 tbsp butter or margarine, melted
1/2 cup milk ,OR 1/4 cup milk & 1/4 beer, OR 1/4 cup milk & 1/4 while wine
1/2 tsp sea salt
1/2 tsp mustard
1/4 tsp paprika
1/2 tsp Worcestershire sauce
2 large eggs beaten
6 slices bread
Beat butter, milk ( or milk mix), salt, mustard,paprika,eggs and Worcestershire sauce together.
Stir in the grated cheese and set aside
Butter the bread slices and cut in half to form triangles.
Pace in a pie dish,( butter sides down) around the sides, point end down, add the remaining slices, on the bottom also butter side down.
Pour over the Cheese egg mix and bake in a pre-heated 400f oven for 25 mins
great served with chutney or pickles
These are great re-vamped recipes from late 20th Century America..easy to make and most ingredients easily available worldwide..also you may substitute whatever you have on hand
