Christmas Eve Delivery ..Menu and prep..Photos

We are in the midst of another great Pacific storm, lots of rain and thankfully warmer nights, even the local mountains have snow.
But the forecasters have promised there will be no rain on Christmas day, but another storm arrives on the  26th.

The menu my client's have chosen for Christmas Eve is:

Italian mushroom soup..coconut cream garlic and nutmeg

Minestrone with pasta

Pozole..with a red chili base, vegetable stock, cabbage, hominy corn and onions, very spicy and  traditionally made with pork and served on Christmas Eve after La Posada..a live re-enactment of Mary and Joseph arriving in Bethlehem and finding the stable..where actors go through a town knocking on doors for entry..I have seen this done in Ste Fe, New Mexico and it is wonderful ( the spectacle and the soup)


Entrees all come with a chopped cabbage based salad
A rice and vegetable gratin ..cooked vegetables, steamed rice with Cheddar cheese to be baked at the clients home..a great cold weather comfort food

Mushroom and vegetable strudels..puff pastry, rolls

Asparagus and Artichoke Jalousie..a large pastry that is filled with vegetables and resembles a French  window shutter

Light on the desserts as they know they will over do things in the next few days...just some great full cream walnut-chocolate fudge.


If you can find these mini sweet bell peppers get them, wash and chop them they are really crispy..freeze great and just add to any soup or stew. Better than the large peppers by far!
