Pancake-Waffle RECIPES..easy global cuisine





Americans love their pancakes and this love began on their migration west in covered wagons, when they didn't stay long enough or conditions didn't lend themselves, to make whole wheat yeasted breads, so they opted for the quicker version of fresh bread, pancakes and the scones now called biscuits.

Here are some ideas..they can be cooked either on a hot greased griddle (girdle UK) or in a large skillet ( frying pan) or in a waffle iron

Basic pancakes

2 cups all purpose flour ( plain)
 1 tsp baking powder
1/2 cup buttermilk ( or fresh milk with 1/2 tsp. lemon juice or vinegar added)
2 large eggs well beaten
1 -2 tbsp sugar ( your  choice either sweet or not so)
1 tbsp melted butter ( unsalted)



milk ( to make up the consistency)

Mix together the baking powder,  flour, buttermilk, eggs, sugar and melted butter and add enough fresh milk to allow the batter to coat the back of a wooden spoon.
Allow the mixture to stand for 1 hour before use.
Fry on very hot greased pans/griddle & etc.
Variations

you can add chopped nuts, fresh fruit ( apple slices, berries, banana), chocolate chips, dried fruit,  in place of sugar maple syrup.
You may also add vanilla extract and or cocoa powder. Even may add coffee either cooled fresh or dried instant, spices such as cinnamon.

Cornmeal pancakes....this is not cornstarch or cornflour it is a coarsely ground corn meal.


2 cups  all purpose flour ( plain flour UK)
1/2 cup cornmeal
1/2 cup whole wheat flour
1 tsp soda
1/2 tsp sea salt
2 large eggs beaten
Buttermilk or sour milk ( see above recipe)

  Mix all the ingredients and add enough buttermilk/sour milk for consistency desired..thinner batter thinner pancake and vice versa

Oatmeal pancakes

2 cups all purpose flour ( plain flour)
2 cups whole wheat flour

2 cups oatmeal ( porridge oats) ..place in a hot, dry skillet and toast them for a few minutes until you can detect a toasting aroma, cool down and then grind well in a coffee/herb grinder, measure out & add to the recipe

1 tbsp baking powder
1 tbsp baking soda
1 tsp sea salt
3 large eggs separated
1/2 cup cooking oil ( not olive)

1 quart ( 2 pints UK) milk heated to lukewarm ..may need  more milk depending on climate and age of ingredients

Mix together all the dry ingredients well, do not sift the whole grain flours.
Add the egg yolks, oil and lukewarm milk, fold in the well beaten whites.
Add more milk to get a quite thick texture.
Cook immediately on very hot greased griddle, turning once.

Whole wheat pancakes
1 1/2 cups whole wheat flour
1/2 tbsp baking powder
1/2 tsp sea salt
1 tsp baking soda
3 tbsp brown sugar or maple syrup
2 large eggs well beaten
1 1/2 cups buttermilk ( see previous recipes)
3 tbsp melted butter

Thoroughly mix the dry ingredients together.
In a large bowl combine the eggs, butter, buttermilk, then gradually add the dry ingredients mixing well, until smooth.
Fry in a hot greased skillet turning once.

Variation* replace 1 cup wholewheat flour with buckwheat flour for an "earthier tasting" pancake
Reduce the amount of sweetening to personal  taste
